Have you had to adapt a gluten-free diet into your life? Are you searching for some of your favorites? Jen understands what a struggle it can be in the beginning. Head to her YouTube channel GlutenFree and Me and find some of her family's favorites!
For 20 years, Jen and her three kids have required a gluten-free diet due to a Celiac disease diagnosis (and boy was it a rough go in the beginning). Having been a foodie from the age of three, and cooking and creating recipes since the age of 23, Jen had to step up to the challenge and teach herself how to create meals and desserts `1that wouldn't harm her loved ones. At the time, she had one book and very little access to any tools to learn how to make gluten-free meals. As a matter of fact, the one thing she learned and taught the kids to repeat when asked "What is gluten? What can't you have?" They would answer, "No wheat, no rye, no barely, and no oats grown in America."
With three kids under the age of eight, a gluten-eating husband, and a true love for good food, she quickly realized the necessity of navigating this new world...so began hours and hours of experimenting.
Jen wanted to create food that her family would enjoy eating and not just "get by" with. She focused her attentions on recreating: family favorites, family recipes that were passed down for generations, entertaining friends, big family gatherings, birthday parties, school parties, and let's not forget all the current trending treats the kids would see others eat and want!
She knew the importance of removing gluten for their health, but she also knew there was more attached to food than nutrients and sustenance. Jen felt it was important for everyone to be able to share in those times of celebration, camaraderie, and friendship. The family became a gluten-free family that loved what they ate, and the gluten-eaters loved Jen's family's food, too!
