Jeanne B Just Happens to be Gluten-Free recipes are amazing. The author Jen Fiore not only gives you some background to her experience of Celiac disease, but she also helps you understand that Gluten-Free is just as enjoyable as any other foods. I have stomach issues but have never been diagnosed with gluten intolerance but since I’ve been cooking and baking gluten-free my stomach does so much better. My first bake was the Ole Vanilla Cake(pg 149) and my family, and I could not believe how moist and delicious it tastes. The next thing I made was the Lemon Chicken (pg 122) and Chicken Lettuce wrap (pg 34) which both were amazing. I did find that my grocery store did not carry some of the ingredients so I just googled what an alternative ingredient could be used in its place, and I was able to make these using an alternative. I liked it so much I was able to put notes next to the recipe so I can remember the next time I make it. This cookbook is for anyone! Thanks Jen for all your inspiration!

Jen Fiore understands the importance of yummy gluten free meals because she has lived with celiac since 2003.
