Jen’s Gluten-Free All-Purpose Flour
 
This is my go-to for GLUTEN-LIKE all-purpose flour. Yes, of course you can buy a gluten-free all-purpose flour at the grocery store and they work great, but I have found through the years that they tend to make certain recipes drier and leave me having to tweak the recipe. I use the store bought and my own interchangeable but for certain cookies and cakes….MY GO TO is my OWN!
 
In a large mixing bowl:
(I try to use organic flours when I can find them affordable)
2 cup Brown rice flour
2 cup Super fine white rice flour
2 cup Tapioca flour
3 teaspoons Xanthan gum
Mix very well with a whisk
Place in an air tight container
 
I like to make this larger amount so I always have some on hand to dredge chicken for a meal or whip a bread up really quick!!!

Jen, I am having a very hard time finding be flour blends for baking or any other reason.
I cannot use the following:
Rice
Corn
No beans or peas of any kind
Can you help me with flours to blend for best results for breads!

Hi Olivia! There are great gluten-free grains I use often that I's love to share with you! I love sweet sorghum, millet, amaranth, potato, and tiger nut. And as far as the starch portion of the gluten-free flour mix it sounds like you are OK with wither tapioca, potato or arrowroot!
So you could play around with these! Let's try one example:
1/2 cup of amaranth flour
1/2 cup of potato flour
1 cup of sweet sorghum
1 cup of tapioca starch/flour
1 TBS xanthan gum

Hi Charlene!
I would love to share with you my recipe! (and tell you a great backup or go-to garlic aioli we buy is "Marie's Roasted garlic aioli" in the refrigerated section in produce section:)

Quick Garlic Aioli

Prep Time: 10 minutes Cook Time: 10 minutes


Ingredients
10-12 good sized garlic cloves, skin removed
2 TBS olive oil
½ olive oil mayonnaise
1 TBS fresh lemon juice
½ tsp salt
½ tsp pepper


Directions
In a frying pan add the oil and on medium, fry the garlic, moving around after a few minutes to avoid burning. Should be nice golden brown after around 8-10 minutes
Remove from the heat to cool.
Add the garlic and the oil from the pan into a small food processor and blitz until smooth.
Add all the rest of the ingredients including the oil that you had in the frying pan. Blend until very smooth



Suggestions:
You can absolutely use a toaster oven, or air fryer to roast the garlic. Coat the garlic in oil then place, Take a piece of foil and a piece of parchment paper of equal size on top of it. Next place the garlic in the middle and make a little bundle. Closing it up as best you can with a small vent on the top. Place in a preheated 400° oven for 10-15 minutes. Take a look at the 10-minute mark. Watch so that you don’t burn. Nothing worse than really burned garlic! Eeek! If you choose to cook the garlic this way, add 2 TBS olive oil to the mixture in the food processor.
