Healthy Freezer Cookies that taste like the Samoas Girl Scout Cookies and packed with Protein5/29/2025 This recipe makes 16 cookies that are 6 grams of protein! These chunky cookies are so tasty and moist you will love them! They are a perfect Breakfast cookie that are not overly sweet and have such wonderful flavors.
PREP TIME: 15 minutes COOK TIME: 20 minutes OVEN TEMP: 350° INGREDIENTS: 1 ½ gluten-free rolled oats ½ cup coconut flakes, unsweetened ½ cup tiger nuts, sliced ¾ cup almond flour ½ cup hemp hearts ¼ cup pumpkin seeds, raw and unsalted 3 Tbsp flax meal 1 tsp baking soda 1 tsp cinnamon ½ tsp salt ¼ cup almond butter, unsweetened and unsalted ¼ cup avocado oil 1 1/3 cup apple, peeled and sliced on mandoliner, then chopped! 4 Tbsp maple syrup 1/3 cup dark chocolate chips DIRECTIONS: 1. Mix all the first 10 (dry) ingredients in a bowl. 2.Add in the diced apples, almond butter, oil, apples, maple syrup and mix well with hand mixer or you can use a gloved hand. 3. Add the chocolate chips and incorporate. 4.Using a ¼ cup measuring cup to help measure and form each cookie. My measuring cup was flatter which helped to get the great cookie form. If yours is more like a cup. Use the palm of your hand to flatten and shape. Place the onto a parchment lined baking sheet (or silicone sheet) and mold there. 6. Pop them in the oven for 20 minutes. 7. Allow to cool. While these are yummy at room temperature – they are NEXT LEVEL DELICIOUS from the freezer. My husband was so amazed at the taste of these and we both agree that they mimic the yummy Girl Scout Cookie but these are GLUTEN-FREE where the Girl Scout Version is NOT!
