Preheat oven 375° for 25 minutes
8x8 pan Makes 16 bars and over 14 grams of protein each bar Ingredients 1 cup vanilla protein powder by Earth Chimp 1/3 cup gluten-free all-purpose flour 1 tsp psyllium husk powder 1 tsp baking powder 1 tsp xanthan gum 1/4 teas salt 3 Tbs hemp hearts ¼ cup maple syrup sugar 1 cup sprouted oats (certified gluten-free), quick blitz in food processor ½ cup avocado oil 3 large eggs 1 tsp vanilla extract 1 ¼ cups milk (I used Lactaid Protein milk-13g protein per cup) 1 cup dark chocolate chips *Avocado oil for lightly greasing the pan and on the dough to flatten before you place the chocolate chips on. Directions 1. In a mixing bowl add the first 8 ingredients and mix until combined. 2. In a food processor, add the oats and blitz them until you have smaller oat pieces and add to the dry ingredients. Mix until combined. 3. Add the oil, eggs, vanilla, and milk and beat until smooth (approx. 1 minutes on mud/high). 4. Brush pan with a small amount of avocado oil. 5. Add batter to pan and smooth out with a little touch of the avocado oil. 6. Using a spatula to spread the oil, then sprinkle the chocolate chips and spread them with the spatula. 7. Place in preheated oven for 25 minutes until slightly golden brown on top and the chips and melted. 8. Remove from the oven and spread the melted chocolate all over the top. 9. Allow to cool for 15-20 minutes. Cut and enjoy!
