Sometimes you just want a dessert that slams with spices and isn’t over powering in the sugar department! If you are with me on that, then this will be your favorite fall treat with a light and airy fast, stress dough!
Makes 8-10 empanadas
PREP TIME: 15 minutes COOK TIME: 25 minutes OVEN TEMP: 375 °
DOUGH PREP: 45 minutes
3 cups Jen’s gluten-free all-purpose flour (page 77) or store bought
½ tsp salt
2 tsp sugar
2 tsp apple cider vinegar
2/3 ice cold water
1 cup of cold butter, sitting on counter for 15 minutes
3 Tbsp maple syrup
1 Tbsp Jen’s gf all-purpose flour (or store-bought
¼ tsp salt
1 ½ Tbsp vanilla extract
2 tsp pumpkin spice
1-8 ounce of cream cheese
1 cup pumpkin puree
½ cup of cane sugar
2 tsp pumpkin spice
1 Tbsp ice cold water (stick a cube of ice in water and measure out the Tbsp for it)
1.By hand, in large bowl, or food processor, mix all the ingredients together until crumble looking and you can still see bits of butter.
2.Pour out the dough onto wax paper, or parchment, and form into a rough ball.
3.Place in refrigerator for 20-30 minutes.
4.When ready, take out and roll the dough out on wax paper lightly dusted with white rice flour, for your pie and/or empanadas!
1.Mix all the ingredients together until silky smooth.
2.Using an 11 cm cookie cutter cut the shape for your empanada.
3.Fill with 1-1 ½ Tbsp pf filling.
4.Fold the dough in half and pinch closed with the tines of a fork. Next, lightly pat the “forked” edges with the pad of your finger.
5.Place on a parchment lined baking sheet.
6.Lightly brush the egg wash all over the top of the empanada.
7. Drizzle your sugar mixture on top.
Place in a preheated oven for 25 minutes and golden brown.
You can control the sugar you serve with the amount of you spiced sugar drizzle you place on top!
You may still have some filling left if you purposefully make (8) empanadas, then make (8) mini cheesecakes using all the same ingredients. Cook for 25 minutes.
