NO Pasta Lasagna

13x9” baking dish
Preheated oven – 375°
 
Ingredients
 
1 head of organic Swiss chard
1 pound of skinless boneless chicken breast
2 tsp of dried parsley
1 tsp sea salt
½ tsp black pepper
1-1/2 Tbsp extra-virgin olive oil
​1 large zucchini, diced small
1/2 sweet onion, diced small
5 cups homemade (or jar) pasta sauce
Optional: 8 ounces whole milk mozzarella cheese
 
Directions
1-Cut 4 inches off of the bottom of the Swiss chards and dice very small.
Cut the rest of large leaf in 1/3’s. Set aside.
2-Next cut onion and zucchini. Cut vegetables. Placed them in a large skillet with the olive oil and sauté.
3-Place 1 pound of skinless boneless chicken breast in your food processor and get ground chicken.
4-Place ground chicken to large bowl. Add 1 cup of gluten-free breadcrumbs.
5-Add parsley and sautéed vegetables. Mix well!!
6-In the baking dish sprinkle the bottoms with a bit of extra virgin olive oil then layer as follows: Long pieces of Swiss chard, sauce, chicken and vegetable mixture, long Swiss chard pieces, sauce, and top with mozzarella cheese (optional)!!
 
Place in a preheated oven for 30 - 35 minutes! Enjoy
