½ pound corned beef, chopped (2 ¼ cups)
2 russet potatoes, peeled (2 ½ cups)
½ large onion (1/2 cup)
½ tsp garlic powder
½ tsp cane sugar
4-6 Tbsp butter
2 Tbsp olive oil
Salt & pepper to taste
1-Chop the corn beef in a food processor or extremely fine with a knife. It should look like small bits no larger than a lentil or pea. Place in a bowl.
2-Peel the potatoes then shred them wither using the shredder disc attachment on food processor or upright box grater.
3-Take the potato shreds, place on a cutting board, and cut them with a knife into small pieces- ¼- ½ inch in size.
4-Squeeze as much of the water you can from the potatoes. Then pat down with paper towel to make sure they are as dry as they can get. Place in the bowl.
5-Shred the onion. Squeeze in your hand to remove as much water content as possible. Place in the bowl.
6- Add the garlic powder and sugar-mix.
7- In cast iron skillet or large frying pan add 2-3 Tbsp of butter. Place the mixture onto the melted butter.
8- With the flame between medium and high allow the mixture to warm through and begin to brown on the bottom. (approximately 4-5 minutes) With a spatula, carefully lift section by section and flip over to begin to brown the other side. You can either drizzle oil under the area you are flipping before it returns to the pan onto OR you can drizzle on the sides of the sections you are flipping, as you go along. Allow to cook an additional 5 minutes on this side. You may want to flip one more time for EXTRA CRISP!
*Note: I have extra butter int eh ingredients list in case you would rather use butter instead of the oil in step 8.
*You can use corn beef from the deli counter. I ask the deli person to cut a block of corned beef instead of slices.
Many people do corn beef hash as a casserole but I created this dish to be non-dairy and paired with eggs OR a spinach turnip green soup!
